Tom Donatelli spent fifteen years living in Italy and decades more in Asia before an unplanned stop in Sarasota became home.
Together with Hoa, he trained under master Roman pizza makers and opened RomanSQ in Gulf Gate with one clear intention: to make this style of pizza properly, or not at all. The result is a pizza that reflects where they have been and what they believe food should be.

Hour Dough
Three ingredients: flour, yeast, water. Ninety-six hours of fermentation develops an open crumb, complex flavor, and a lightness you cannot fake. No additives. No shortcuts.
Double Deck Hearth
Roman pizza bakes lower and slower than Neapolitan. The Castelli double deck oven was imported specifically for this. The right equipment for the right bake, every time.
Scratch
Every Topping
Grilled peppers charred whole. Basil grown on-site, picked before each service. Every sauce made in-house. Nothing comes from a jar. Nothing is premade.
